…  I am working hard on keeping mine going these days – it seems to be flickering a lot …

but … have you ever enjoyed “Bubble Tea”? Originally created in Taiwan, it can definitely keep your light going 🙂  We could all use some sweet levity & comforting joy right now (with a boost of superfood healthiness, of course). I really got hooked on it while living in Thailand & quickly learned to ask for “nid noi” (little) sugar – but oh how yummy was that Thai Iced Tea with Boba! Here is our nutritious SAKU twist on it … Enjoy!         love, sandra                                            

INGREDIENTS:

  • ½ cup big tapioca pearls – makes about 1 ⅓ cups of cooked pearls (so you will have enough boba for 4 drinks 🙂
  • 2 tbsp of sugar – I use coconut sugar because it’s healthier & I like it malty
  • 1 tsp of your favorite SAKU blend – the Jade blends & Ruby Cocoa need a little more
  • 1 cup of your prefered milk – I love oat
  • Ice cubes

HOW TO MAKE BOBA:

  • Bring 3 cups of water to a boil.
  • Add tapioca pearls and bring up to a boil again.
  • Cover and turn the heat down to medium low. 
  • Cook covered for 20 minutes, stirring occasionally to prevent sticking.
  • Remove from heat and let sit for 20 minutes.
  • Drain and rinse under cold water.
  • If the tapioca pearls still have an opaque white center, repeat prior steps until all  boba are translucent. You may have to repeat this a few times!
  • In the meantime, dissolve the 2 tbsp sugar in ½ cup warm water.
  • Pour drained and rinsed pearls into sugar water to prevent them from sticking.
  • For perfect chewiness use within 2 days!

HOW TO FINISH:

  • Put ⅓ cup boba in a 16 oz glass.
  • Add some ice cubes.
  • Mix your favorite SAKU superfood blend with ⅓ cup of warm water, sweeten if you wish, & pour over boba & ice cubes.
  • Cold froth 1 cup of milk & pour on top. To cold froth milk, you can blend it in a blender, hit it with an immersion blender, use the cold froth setting on your milk frother, or (my favorite) put an ice cube & your milk of choice in a jar, put on the lid and shake like crazy. 
  • Sprinkle with SAKU superfood 🙂
